Saturdays mean chores, kids, and plenty to do so I like to try and keep things simple when it comes to lunch.

This is a simple salad – I mean really simple – and it’s been something that I’ve pulled together on more than a few weekends just to get something cool and fresh in my mouth.

Ingredients

  • 1/2 cucumber
  • 1 ripe avocado
  • rock salt (to taste)

Method

  1. Wash and dice the cucumber, leaving the skin on
  2. Peel, pit, and dice the avocado
  3. Combine the cucumber and avocado in a bowl and stir together with a spoon
  4. Add rock salt to taste – you don’t need a lot, a sprinkle will do to contrast with the avocado

  • Net Carbs: 6 grams
  • Protein: 4 grams
  • Fat: 21 grams

Nothing to it, right?

I mean, does it really count as a recipe at all when you just cut up a couple of items and combine them in a bowl? Probably not but it is simple and it is fresh and it is good for you, too.
