Saturdays mean chores, kids, and plenty to do so I like to try and keep things simple when it comes to lunch.
This is a simple salad – I mean really simple – and it’s been something that I’ve pulled together on more than a few weekends just to get something cool and fresh in my mouth.
- 1/2 cucumber
- 1 ripe avocado
- rock salt (to taste)
- Wash and dice the cucumber, leaving the skin on
- Peel, pit, and dice the avocado
- Combine the cucumber and avocado in a bowl and stir together with a spoon
- Add rock salt to taste – you don’t need a lot, a sprinkle will do to contrast with the avocado

Nothing to it, right?
I mean, does it really count as a recipe at all when you just cut up a couple of items and combine them in a bowl? Probably not but it is simple and it is fresh and it is good for you, too.
